Hearty Split Pea Soup Recipe
Sauté 1 chopped onion, 2 minced garlic cloves, and 2 diced carrots in olive oil until soft.
Add 2 cups dried split peas, rinsed, and stir for a minute.
Pour in 6 cups vegetable broth, and season with 1 tsp thyme, 1 bay leaf, salt, and pepper.
Bring to a boil, then reduce heat and simmer.
Cook for about 1 hour, stirring occasionally, until peas are tender.
Remove bay leaf and blend half the soup for a creamy texture.
Return blended soup to the pot, adjust seasoning, and stir.
Serve hot, garnished with fresh parsley or croutons.
