Fluffy Banana Pancakes Recipe
In a bowl, mash 2 ripe bananas until smooth.
Whisk in 1 cup of milk, 1 large egg, and 1 tsp vanilla extract.
In a separate bowl, mix 1 cup flour, 1 tbsp sugar, 1 tsp baking powder, and a pinch of salt.
Combine the wet and dry ingredients until just mixed (don't over-stir).
Heat a non-stick pan over medium heat and grease lightly.
Pour ¼ cup of batter for each pancake onto the pan.
Cook until bubbles form on the surface, then flip and cook until golden brown.
Serve warm with syrup or toppings of choice!
